Honey process is a variation on Pulped Natural method with the exception that no water is use to depulp the skin of the ripe cherries. All mucilage is left on the exterior surface of the parchment beans giving the coffee its uniquely sweet flavour. For drying we always use raised "African" beds with plastic cloth on top to allow for air circulation.
The members of Ngöbe-Buglé ethnic groups are some of the poorest people in Panama. We believe that growing quality coffee on their own land will help them overcome the omnipresent poverty.
